Happy, happy Friday! We’ve made it to another week. What a crazy week it has be too. The sun is out, birds are chirping, and the grass won’t stop growing (okay I know that’s a totally different story)…
Anyway, with all that has been going on, eating a good, quick, and balanced meal can be so tough. It gets me thinking about my old self, the one that would hit a drive thru in a quick minute without even thinking about what it would do to my insides. With all of this thinking, it brings me to my next 20 minute meal. My old self ate and LOVED crunch wraps. So today I’m showing you my version of the crunch wrap but this one is a lot better for you and you can start devouring it in under 20 minutes which make this a WIN!!
Today is a little different, it’s a left over meal. I had left over chicken from taco I made so I thought this would be perfect. Everyone has leftovers from time to time. Instead of having the same thing for 2 days why not change it up a little.
If you don’t know this about me I don’t eating anything artificial, I try to stay away from refined sugar, I do not eat any dairy, and I limit my meat consumption to once a day. So all of my recipes revolve around these rules of mine.
This copy cat crunch wrap includes black beans, shredded chicken, a few tortilla chips, salsa, lettuce, corn, tomatoes, and green onions. If you can think of any other veggies to pack in there please let me know, haha, I’m sure my family would love to know LOL.
Start off by laying a spoon full of chicken in the middle of the bottom of the tortilla, add a small amount of black beans, add a dollop of salsa, then add the tortilla chips, and then top with the veggies.
Once everything is added now comes the tricky part, the folding. I like to fold it a little at a time. Take a small part of the tortilla and fold, turn, fold, then turn until you have folded the whole thing.
I use a panini press to toast this up. It grills it on both sides at the same time and it is really easy clean up. Once the tortilla browns a little on the outside your crunch wrap it ready to be eaten. Serve it up with your favorite salsa and guacamole.
