Hey everyone! I hope your week went well. The weekend is quickly approaching. I’m so looking forward to the weekend. It’s a long weekend and it’s Memorial Day Weekend. I treat Memorial Day weekend the unofficial start of the summer season. What other way to celebrate then with a great BBQ. Pull out the grill and enjoy these 5 awesome 20 minute BBQ meals. Yes you read that correctly 5 meals. You can pick and choose or prepare them all for your fun BBQ. I’ve included a shopping list along with the recipes.
Planning a BBQ can be a lot of work and a lot of stress. Earlier this week I posted Planning A Perfectly Awesome BBQ That Will Rock part 1. Today I’m continuing the post with some 20 minute meal ideas. Like I said planning can be a lot of work. Probably the hardest part is the food because everyone eats so differently. We have a lot of different food allergies in our circle of friends and family so it can be a struggle. I also try to make all of the meals that I cook as healthy as possible. Below I’m going to give you some great examples of main dishes, sides, and even a few desserts. The shopping list and all of the recipes are in the VIP section. Here’s a twist to the classic BBQ staple. BBQ’d Turkey Burgers. Turkey is a great substitution for beef. Using turkey instead of beef cuts calories and fat. Save some time by purchasing frozen patties. Once your BBQ is warmed up you can just place them right to the grill and cook them up. Don’t forget the yummy condiments!!
Beet Black Bean Burgers
Do you have vegetarians or vegans in your circle? Dropping the meat is becoming more and more common. Do I have a treat for you! It can be tough to find a super yummy meat substitute. This burger really has it all, it is full of flavor, great plant based protein, and will put a big dent into your veggie serving for the day. You can make a batch and freeze them and serve them up in no time flat. Ahh classic! Chicken wings never last long at BBQ’s I throw. I always have to make 2 batches. The first batch is ready for when people start to arrive and I make another batch about an hour in. This is super simple. A day before your BBQ place your wings in a zip bag with your favorite BBQ sauce. Once it is time to grill them they will be marinated and ready to go!
Okay, this is always a winner. There is always someone trying to lose a few pounds or is extremely limited on what they can eat (blood sugars, gluten allergies, soy allergies, etc). This is a fool proof allergy friendly dish and probably one of the easiest to prepare!
This can be a fun one. I like having the items separate and letting the guests make their own. Throw it on the grill and they can pick their flavors also. These kabobs can be a combination of different meats and veggies.
I’ve featured this recipe before. This is a very simple less then 20 minute side dish. It’s a classic BBQ side. I’ve made a few changes so it is nice and healthy.
Can’t get simpler then this. Purchase an already assembled one or put one together yourself. Either way this will take no time at all.
I made this one year and it was the biggest hit. So it has become a BBQ staple. The kids loved it. It’s really easy to put together and super convenient to serve. There are never any left overs.
This dish is a BBQ staple, in my opinion. This pasta salad is a little different then the pasta salads that I’m sure you are use to. This is packed with veggies to keep it light but tasty at the same time.
Okay so yes, this probably isn’t a classic BBQ dish but, let face it, kale is everywhere! I’ve become a huge fan over the past 5 years and LOVE this salad. I love how kale stand up to the dressing. You can dress it and leave it and not worry about sogginess. It is dairy free so there is no need to worry about this going bad while sitting out.
I’m not big into posting desserts usually on my blog. It’s not because I don’t love them, I just haven’t gotten around to it I guess. So here are my 3 favorite BBQ desserts. They’re all vegan and mini.
Mini Chocolate Cupcakes
I love mini desserts and you will see that by how I’ve put together my list of dessert. Making these cupcakes mini helps on cooking time. They don’t have to bake as long means a big win for me!!
Mini Strawberry Shortcakes
Oh this screams BBQ doesn’t it! You cannot have a BBQ and not serve a strawberry dessert. Yes, I’ve made them mini. They’re so tiny and cute. I love dessert and I love my clothes a little more so eating the mini version gives me the best of both worlds.
Mini Pecan Pies
Okay so my favorite dessert of all time is pecan pie. Full of corn syrup, eggs, butter, sugar oh my!! Well I’ve made them healthy. You will not find refined sugar in this version. These are completely made of whole foods. They’re gluten free, soy free, raw, and vegan. You’ll totally love these!
