Happy Friday! So glad the weekend is here! Okay so I’m a sucker for comfort food! I LOVE chicken pot pie. Actually I just love pot pie. What’s not to love, creamy veggie mixture, warm flaky crust, oh man starting to drool… This is one of my all time favorite meals. It’s not the typical pot pie because it’s not a pie. It’s a deconstructed pie made with a biscuit instead of pie crust. Why you ask? Well it’s quick, easy, and who doesn’t love a homemade biscuit?
This pot pie is warm, creamy, and filling. How can you go wrong with that? Oh did I mention that you can have this on the table in 20 minutes? Now I have your attention!
Okay, so if you know me or you have been following this blog for a while, you know that all of my recipes must pass a certain test. Is it quick? Check! Is it simple? Check! Is it packed with veggies and healthy? Check! Well, okay maybe the biscuit isn’t really healthy but you have to give in once in a while, right!?! Is it tasty? Check, check!
I LOVE butter flaky biscuits and why not, because biscuits are, in my book, the definition of comfort. So these biscuits are a perfect mate for the pot pie filling.
This recipe serves 4 but could easily serve 8 if you are willing to share the extra biscuit with a person and not to homemade jam. Also, this recipe is so simple that this could be the perfect dinner for those super busy nights. My youngest loves to make the biscuits while I put the chicken and veggies together. She loves making these with her bare hands and she’s become quite the pro.
