The sun has been out. We’ve been experiencing warmer then normal weather. When that happens I don’t need any more reasons to pull out the BBQ. The BBQ is my favorite way to cook during the beautiful spring and summer months. All of this BBQ talk is bringing me to the next super simple 20 minute meal. This week I’m sharing some nice fresh chicken fajitas.
With Cinco De Mayo quickly approching what a perfect reason to fire up the grill and make these. It is no secret that I love Mexican food. I could eat it about 4 times a week. In our house we have tacos once a week and I usually have “taco salads” for lunch. I quote taco salad because I use salsa as salad dressing which in my mind makes it a taco salad. Anyway, back to the fajitas. I make a quick marinate for the chicken and then grill up the chicken. I also slice up the bell pepper and onion and put that on the grill also.
One of my favorite things to order in a Mexican restaurant are chicken fajitas. I love the sound of your dinner making its way to you. Everyone looks at the sizzling fajitas walking through the dining room. I love the smokey flavor of the meat and veggies. By using the BBQ you are able to get that smokey flavor and you are not using all of that oil to saute everything. You are keeping the flavor and cutting the calories at the same time!
Also, by using the grill you’re saving a ton of time. While the chicken and veggies are grilling, it’s a perfect time to put together a quick pico de gallo, slice up some avocado, and just wait for the meat to cook fully.
I love how light these are. They are packed with veggies, healthy fats, and lean protein. Some more great news they are soy free, dairy free, and gluten free. These can be easily made to be vegan by switching out the meat for either beans or tofu and you’re in business.

- Slice and chop the veggies
- Grill up the veggies and chicken
- Warm up the tortillas
- Assemble and enjoy
