Happy Friday!!! What a week it has been I am so glad to see the weekend is so close. Now that it is sunny out and summer is upon us it seems that my life getting busier and busier. So when it comes to making dinner I need something quick, tasty, and filling. Which brings me to my new 20 minute meal. How about trying Pulled BBQ Chicken Sandwich.
You know that we are in full BBQ season. The sun is out, birds are chirping, and all I want to do is hang out on my deck. With just a few ingredients you will be able to fix dinner and get back to hanging out and enjoying the weather.
Okay so yes there is a little twist. Usually when you think of pulled BBQ meat you think of pork. Well how about trying chicken. In this version I use chicken breast. We can all agree that chicken can take a lot less time to cook then pork.
These sandwiches are made with 4 ingredients. You cannot beat that. You actually may already have these in your kitchen right now. Grab a bottle of your favorite BBQ sauce, a couple of thawed out chicken breasts (to serve 4) shredded cabbage, and some of your favorite buns (I’m a fan of ciabatta buns). I’ve paired this with some steamed veggies and a side salad.
By boiling the chicken breast you are able to shred the meat. The chicken stays nice and tender cooking it this way. Once the chicken has completely cooked take 2 forks to shred the meat. Remove the water from the pan and place the shredded chicken back in and add a good amount of the BBQ sauce. Stir it to evenly coat, and your chicken is ready.
I like to toast the buns so they do not get soggy immediately. When you get the chicken together, preheat the oven to 350 degrees. Once you have the chicken prepared, add the buns to the oven. You’ll get a nice toast by having them in the oven for a few minutes.
What about the steamed veggies. No meal is complete without a nice serving of veggies on your plate. So here are your options. 1. Use frozen broccoli or mixed veggies heat it up in the microwave or on the stove top. 2. Purchase precut fresh mixed veggies (Trader Joe’s has bags in the produce section). Add some water to the veggies and steam in the microwave or over the stove top. These options are huge time savers and you are serving up some awesome tasty veggies.
2 Chicken Breast
1 Jar of your favorite BBQ sauce
1 Bag shredded cabbage
4 Ciabatta buns
Fresh or Frozen veggies
1 Bag of salad
Favorite salad dressing
Favorite salad toppings ex. sunflower seeds
In a medium pot fill with water and add the chicken breasts turn on to medium high heat. Cover and allow to come to a boil. Once it is rapidly boiling lower the heat and allow the chicken to cook fully. Once the chicken has cooked, remove from the water and shred the chicken. Once the chicken is shredded add the BBQ sauce until the chicken is coated to your liking.
Preheat the oven to 350 degrees F. While the oven is preheating, add the buns.
Steam the veggies by either the stove top or the microwave.
Assemble the salad.
Remove the buns from the oven.
Dinner is ready to be enjoyed.
Spoon some chicken on to the buns, top with some shredded cabbage. Serve with some steamed veggies and salad.
