Hello Friday! The weekend is sooo close I can almost taste it! Speaking of taste, how about another 20 minute meal!! Today it is Shepard’s Pie! So quick, easy, and filling. You have dinner covered.
I was so surprised how quickly this was able to come together. I put this together in individual ramekins making 4 individual servings. So, if you are a family of 2 or cooking for yourself this could easily become a freezer meal. You could also serve this up in one pan. This is a perfect meal again packed with veggies.
You’ve got yourself a gluten free and soy free meal without even having to try. For this version of shepherd’s pie I used ground turkey. If your a non meat eater change it up with some TVP, lentils, or even some oven baked tofu. Now if you’re a beef person please by all means use ground beef. I try to stick to leaner meats so my recipes are usually chicken, turkey, or vegetarian.
You will be so surprised by how quickly this meal comes together. Boil the potatoes, cook up the meat, add the veggies and spices. Once that’s come together smash the potatoes, as you can tell by the photos I leave the skins on (saves time and energy), then I like to put them under the broiler for a minute or two to finish it off.
