Happy Saturday I hope you are getting a wonderful start to your weekend. Today’s 20 minute meal is Sloppy Joe’s. The real treat is this comes along with 2 sides. You are going to be nice and full after making this meal. I guarantee you will want to make this over and over because it is quick, easy, and delicious!
This meal is packed with veggies. As always I was able to sneak some veggies into the sloppy joe’s and both sides are veggies! This recipe is used with ground turkey. You can use beef, chicken, TVP, or even lentils the choice is yours.
The sloppy joe’s are a mixture of tomato, carrots, onion, bell pepper, garlic, and a mixture of spices. I pair the sloppy joe’s with some boiled fingerling potatoes and broccoli slaw. This is a complete meal.
Like I said earlier this recipe is very customize-able. The recipe is gluten free and dairy free. I serve this with a whole grain bun you can substitute the bun for a gluten free one. If you are concerned about carbs substitute the bun for bib lettuce and make this into a lettuce wrap.
If you are not a potato person or cannot eat them you could substitute the potatoes for a steamed green vegetable.
The broccoli slaw is a mixture of broccoli stems, carrots, and an apple. The slaw is made with a small amount of maple syrup and apple cider vinegar.
