This week has been such a crazy week. The time change has really thrown me for a loop this week. I feel behind before I even start the day. So thank goodness for quick and easy meals, right! Today I am featuring a quick and easy chicken stir fry. This lovely goodness will be on the table for you and your family in 20 minutes.
Today’s meal is a well rounded meal packed with veggies, protein, and carbohydrates. You’ll be so surprised how quick and easy this meal is to put together. No need for take out or delivery, you’ll have this on the table before you can make up your mind on where you’ll order from.
In just a few quick steps you’ll be eating a nice warm meal. Start off by getting your rice cooking. I’m a fan of the whole grain minute rice blend. Once that has started cut your chicken into bite size pieces. I like to purchase chicken tenderloins it saves me time cutting them up. Don’t forget to use a lid on your pans, this traps the heat, allowing the chicken to cook quicker. Adding a little chicken broth or water to the bottom of the pan helps the chicken from sticking to the pan and it also keeps the chicken moist. I use this instead of oil. An easy way to cut a few calories!
Another way to save time is purchasing frozen stir fry veggies. They are cut up and ready to go. Making this even easier to prepare. Once the chicken has finished cooking add the frozen stir fry veggies and the sauce.
