Happy Friday! Hope you had a wonderfully productive week. I had one of those week where I just didn’t have enough time to breath. When it came to cooking, that was the last thing I wanted to do. I could have easily said screw it let’s eat out but I am really trying to be good and stay on a semi-healthy diet. So I share with you today a quick, simple, and satisfying meal with you. How about a meatball subs!
These subs are so easy to make, you’ll keep this recipe around on those nights that are way over booked because these take no time to make and they fill you up. This meal requires only 4 ingredients, the microwave, and the oven.
Like I said earlier, I just didn’t have time to cook a full on meal. Looking through the fridge and freezer I came across some Trader Joe’s meatless balls, a can of opened marinara sauce, whole wheat hot dog buns, and some left over mozzarella cheese. If you want to change the meatless balls with turkey, chicken, or beef please by all means change it to what ever you have around.
This took a total of about 15 minutes from start to finish. I think that even included my rummaging through the freezer and fridge. Very, very simple! You can easily add a side of french fries or even broccoli to make this into a complete meal.
